Hamilton Jamaican Pot Still Gold Rum - distilled by Worthy Park Estate - Jamaica

A blend of extra light, light and heavy pot still rums distilled from fermented molasses from the Worthy Park Estate sugar mill.

Shipped to Five & 20 Spirits in Westfield, NY in 1000-liter IBC totes at 85% ABV, then diluted and colored with cane sugar-based caramel for bottling.

Jamaica is located near the geographic center of the Caribbean, south of Cuba and west of Hispaniola.
Worthy Park Estate is close to the geographic center of Jamaica.

Sugar has been the main crop at Worthy Park Estate since 1670.
Worthy Park Sugar Mill
The sugar mill is the most efficient on the island and turns tons of sugar cane into sugar and molasses that will be used to make Worthy Park Rum. Worthy Park Sugar Mill
The molasses used at the Worthy Park Distillery is produced at the Worthy Park Sugar Mill on the estate. Molasses is pumped from the sugar mill to the distillery and stored in this storage tank until it is fermented at the distillery.
Three different yeasts are used to produce the three different rums - light, extra light and heavy that are blended together to give the fresh white distillate the desired character and flavor.
The fermentation ABV varies but is approximately 7% ABV for the three rums.
Fermentation times also vary and are monitored and recorded by instrumentation at the control panel in the distillery laboratory.

All of the processes are monitored and recorded by electronic instrumentation. By recording things like fermentation temperature profiles, it is possible to produce a more consistent product and avoid problems.

The distillate is condensed at about 87% ABV
There are no GMO ingredients in Worthy Park rums.

From Kingston, Jamaica container #GLDU5624037 was shipped on the vessel Spica to the Redhook Terminal, New York, NY. After being barged to the port in Newark, the container was trucked to Western Carriers warehouse N. Bergen NJ.

June 6th, five IBC (Intermediate Bulk Containers) were trucked to Five & 20 Spirits distillery in Mayville, NY for bottling.
Each of these containers contains 1000 liters of rum at 85% ABV.

The fresh, clear blend of light, very light and heavy rum was diluted to bottled strength with filtered well water from the Five & 20 Spirits property.

After dilution, this rum was colored with Sethness Caramel made with US grown sugar cane sugar. Nothing else has been added to this rum. Prior to bottling, this blend was filtered with a one micron filter to remove charcoal that may be suspended in the liquid and that might prevent a malfunction in the bottling machine.
Bottles are filled with a six bottle gravity feed filler.
